WHY UNPASTEURIZED AND RAW?

Truly raw almonds have the most powerful nutrition benefits and the best taste.

Did you know? Raw almonds purchased from a grocery store are not actually raw, even if they say "raw."

No legal definition of “raw” exists when it comes to food, so retailers can sell pasteurized almonds and still call them “raw almonds,” because they aren’t roasted, not because they’re actually raw!

California produces over 85% of the world’s almonds. California has forced almond growers to pasteurize all their nuts above 130 degrees. This steam process blunts the almond flavor, and kills beneficial enzymes, which are destroyed at 118-120 degrees.

Live enzymes are fantastic for you, giving your body a rest from having to produce its own enzymes to digest food.

Unpasteurized, raw almonds are nearly impossible to come by... unless you import them from Spain, which costs at least $8-$13/lb. Yikes!

HOW ROBYN EATS ALMONDS

I soak almonds overnight to germinate them and then dehydrate them till they’re crunchy, eliminating more possibility of chemical residue.

I recommend dehydrating them below 116 degrees to preserve all the enzymes. Then, they are live food with 200 – 500% more fiber and nutrients (enzyme inhibitors in the nut are unlocked when you soak them 8 hours).

Almonds are a staple for any whole-food home. Put 1 part almonds (soaked overnight and drained) in 4 parts filtered water, blend well, and you have almond milk with lots of live enzymes, for any purpose, including topping granola in Chapter 10 and making Butter-Pecan Ice Cream in Chapter 11 of 12 Steps to Whole Foods.

Nuts are high in fat, but almonds have less fat than most. They are extremely high in fiber and protein. A handful of almonds with a quart green smoothie is one of my favorite power lunches for days when I’m in a hurry.

And almonds slow the absorption of the sugars from the fruit in the smoothie into the bloodstream. Almonds are rich in vitamin E, magnesium, and potassium, and will help lower cholesterol and protect against heart disease.

HOW LONG DO ALMONDS KEEP, AND HOW SHOULD I STORE THEM?

Almonds harvest only once a year, so whenever and wherever you buy them throughout the year, they will be from this same fall crop.

They may keep 9-12 months in the pantry, but if you would like to keep them as fresh as possible, refrigerate them in tightly sealed bags or jars for 18-24 months, or freeze them indefinitely. They will still germinate (sprout and unlock enzyme potential after soaking) after freezing with very little loss of nutrition.

WHEN SHOULD YOU EXPECT YOUR ALMONDS TO ARRIVE?

Almonds will ship directly from the farmer as they are harvested. They should ship out within 4-6 weeks after the order is placed. We will email you when your Group Buy items ship. 

PLEASE NOTE: Almonds will ship in a food-grade plastic bag that is unsealed inside a shipping box. This is the industry standard for unpasteurized almonds and is necessary to allow the almonds to breathe. If any almonds happen to arrive loose inside the box, please wash them and use as you normally would.

*These almonds are just short of being certified organic, and are as close to organically grown you can get from the farmer.
